Indian Chicken Curry recipe

While people think of curries and Indian food being difficult to prepare, this simple Indian chicken curry recipe demonstrates how easy chicken curry recipes really can be.

Ingredients for simple Indian Curry

1 onion, chopped finely

2 cloves of garlic, chopped finely

2 breasts of chicken, cut into bite sized cubes

1 can tomato, chopped

Juice of 1/2 a lemon or lime

1 teaspoon each of cumin, coriander (cilantro), ginger, turmeric, chili powder, fenugreek

Method

1. Mix the spices together and add a little water to make a thick paste.

2. Add a 2 tablespoons of oil to a medium hot pan and fry the onion and garlic until golden. Add the spice mix and stir well. Continue cooking until the water content is removed.

3. Add the chicken and mix in the spices and onion until coated. Add the lemon or lime juice and stir again to mix well.

4. Add the tomato, mix well and reduce the heat. Cook for 45 minutes-1 hour and serve with basmati rice.

That’s it! this Indian chicken curry recipe takes about 10-15 minutes preparation time and 45 minutes - 1 hour cooking time. If you cook it the day before you eat it the flavors will be more intense, although it can be difficult to wait that long!

Why I love Indian restaurants

I don’t get over to England much these days, maybe once or twice a year, but one of my priorities is always to find somewhere to sit down comfortably with a good chicken curry recipe.

I like them pretty hot, so often a Chicken Madras with pilao rice is just the thing, and although I usually skip the starter I’ll always have poppadoms with the relishes and sometimes naan bread too. The only thing missing from thatlist is a glass of ice cold Cobra beer, specially developed to be drunk with curries.

Once of the great things about Indian restaurants in the UK is that they are somewhere you are almost always happy with. The surroundings are pleasant, often decorated with Indian pictures and fabrics, tables usually have linen tablecloths, often there is soft Indian music in the background and the service is first class.

That all sounds terribly expensive, but the truth is that Indian food offers some of the best value for money you can find in restaurants in the UK and you’ll usually find it works out less than £20 per head.

Indian restaurants often home delver too, so you can taste the spicy delights at home while watching TV. What a shame it is then that while so many people enjoy Indian food, so few of them ever learn how to make a good curry.

Cooking chicken curry recipes at home

Many people consider curry as one of the greatest comfort foods, but are put off trying to cook their own chicken curry recipes because they think that curries are just too difficult to make.

In fact with a small selection of spices in your kitchen you’ll find that you’re all set to get cooking and as the BBC television series “Indian Food Made Easy” presented by Anjum Anand proved, once you’ve practised a few times you’ll find cooking curry and other spicy foods to be straightforward and rewarding.

While curries needn’t be terribly hot, good fresh spices are essential to the fantastic flavours in Indian and Far Eastern cuisine. While many dishes can be prepared with dried spices, make sure that they have not gone stale and lost their flavour. Fresh coriandar and ginger are wonderfully aromatic and can provide a freshness that can really make a dish.
